It’s soon to be one of our favourite days of the year… PANCAKE DAY! Yes we’re pretty excited in the ILoveGin office and one of our favourite things to do on this special day is to make GIN pancakes!

Now you’ve got four options when it comes to making gin based pancakes, from easy to a slightly longer method. Take your pick from them below and enjoy some delicious gin based pancakes…

 

1. Blackberry Gin Pancakes

This method literally adds approx 5 seconds to your pancakes making time, simply get some Slingsby Blackberry Gin and add a table spoon or two into the batter mixture just before you ladle it into your frying pan. You may have to do some trial and error with the exact amount of Blackberry Gin, we generally use 2 tablespoons per 125g flour/3 eggs etc)

Sloe Gin also works really well, if you prefer it a little sweeter. Let us know if you find any delicious gins to use!

 

 

 

 

2. Gin Pancake Syrup

Holly The Gintern created this syrup for her pancakes and it is very moreish! We tried this with Masons English Lavender Gin, which gives a wonderful twist, especially mixed with lemon. These pancakes smothered in gin syrup will not last long!

You will need:

Method :

  1. Add water, sugar and lemon to a saucepan and stir.
  2. Bring to the boil, then simmer gently until thickened (the syrup should become more golden in colour).
  3. Stir in the gin and simmer for a couple more minutes.
  4. Let the syrup cool and add to your favourite pancake recipe. Enjoy!

 

3. Gin Lovers Blueberry Pancake Brunch

Forget your eggs in the morning, this is the perfect brunch for a gin lover! A refreshing G&T goes wonderfully with Blueberry Gin pancakes you know!

The gin syrup works best with American style pancakes (as they soak it up better) Holly used this trusty Jamie Oliver recipe which never goes wrong for her! She added fresh blueberries to the pancakes – you just sprinkle a few on top before flipping.

You will need:

  • 150ml water
  • 150g caster sugar
  • Juice of half a lemon
  • 50ml Blueberry Gin (Blackberry Gin works just as well!)

Method:

  1. Add water, sugar and lemon to a saucepan and stir.
  2. Bring to the boil, then simmer gently until thickened (the syrup should become more golden in colour).
  3. Stir in the gin and and take off the heat.
  4. Let the syrup cool and add to your favourite blueberry pancake recipe.
  5. Pour yourself your favourite Gin and Tonic! Enjoy!

 

4. Pancakes with Gin Sabayon

This takes your normal pancakes but adds a unique topping called Sabayon, which is delicious on it’s own but with added gin it’s even better. (Recipe credit: L’atelier des Chefs)

You will need:

  • 3 egg yolks
  • 125g Icing Sugar
  • 20ml Gin (though you can use more. We recommend a classic dry gin)
  • 150ml Double Cream

Method:

  1. In a bowl mix together the egg yolks, the icing sugar, gin and water, whisk together over a bain marie until the mixture has approximately tripled in volume and is a light/fluffy texture.
  2. Allow to cool and then separately whisk the double cream, and fold it in to the mixture in the bowl.
  3. Make your favourite pancakes, and when cooked and on a plate, spoon on the gin Sabayon mixture, perhaps garnishing with some berries. Enjoy!
