5 Ways to Spice Up Your G&T for Christmas
Although we, G&T people, love to keep our favourite tipple simple, these variations HAVE to be tried. Herbs and spices can really bring out the flavours of the botanicals in the gin and make your G&T a whole lot brighter and bolder.
Winter Spices Gin & Tonic
- 1 part Gin
- 2 Parts premium Tonic Water
- 1 Royal Gala apple
- Few Drops of Angostura Bitters
- Star Anise
- Cloves
How to Mix
- Fill a high-ball glass with ice cubes and add all the ingredients over the ice, stir gently.
- Push in the cloves and star anise in a slice of apple and use as garnish.

Tarragon and Grapefruit Gin & Tonic
Ingredients
- 2 sprigs fresh tarragon, plus extra for garnish
- 1 tablespoon turbinado sugar
- 50ml strained fresh squeezed ruby red grapefruit
- 50ml gin
- 125ml tonic water
- A slice of grapefruit
How to Mix
- Lightly crush the sugar and tarragon in a cocktail shaker.
- Add ice cubes, gin, juice and shake – shake – shake.
- Fill a tall glass with ice, pour the mix in and top with tonic.
- Add a tarragon spring and a slice of grapefruit as garnish.

Cardamom Rose Gin & Tonic
Ingredients
- 1 lightly squeezed cardamom seeds
- 50ml of gin
- 20ml of rose syrup
- 2 dashes of fresh lemon juice
- 25ml fresh ruby red grapefruit
- 3 dashes of Peychauds bitters
- Tonic water
- Lemon slice
How to Mix
- Pour all the ingredients (except the tonic) in a cocktail shaker with a handful of ice and shake shake shake for 30 seconds.
- Strain into a tall glass filled with ice and top with the tonic.
- Garnish with the slice of lemon.

Warm Juniper Infused Gin & Tonic
Ingredients
- 30ml Gin (we like Jensen’s dry and Haymans for this)
- 10ml simple sugar syrup (recipe here)
- 80ml heated tonic water
- 230ml of double cream infused with juniper
How to mix
- Infuse the cream with the juniper berries: warm up the cream in pan at low heat, add some lightly crushed juniper berries and let it simmer for a few minutes.
- Strain the mix through a sieve and let it cool.
- Heat the tonic until all the bubbles disappear and let it cool to tea temperature.
- Pour the tonic in a coupe glass.
- Put the cooled cream, gin and syrup in a cocktail shaker with a tiny bit of ice and shake shake shake SHAKE (needs to get creamy).
- Strain in the glass on top of the tonic and it should sit on it like it does in the picture!

Dill Gin & Tonic
Ingredients
- 50ml navy-strength gin
- 20ml pickle brine (preferably from a jar of kosher dill pickles)
- 75ml tonic (Fever tree mediterranean tonic is best)
- Lemon verbena leaves
- Dill frond
- Lemon twist
How to mix
- Pour the gin and pickle brine over ice in a rocks glass and mix.
- Top with the tonic water.
- Garnish with the lemon twist, verbena leaves and dill.
