Apparently ginger cake gets better the longer you leave it, unfortunately in my house that’s about one day! After recently trying Elephant Gin, I knew I had to create a cake with apples and ginger to compliment the botanicals of this amazing gin.

With Valentines Day fast approaching, creating a delicious recipe with X-Gin (“a pure aphrodisiac”) was a no brainer! I absolutely love drinking X-Gin with cocoa nibs and raspberries, and I think this creation is the perfect combination. The raspberry gin coulis was very popular in my house, so I would recommend making double the amount!
