Having picked a load of blackberries and receiving Colonsay Bramble Liqueur in Ilovegin.com’s September box…. this recipe was the perfect choice! A splash of premium tonic (like Poacher’s Classic) makes all the difference in the drizzle icing… 

 

If you also have a load of blackberries… I can’t recommend this enough! One of my favourite cakes is a Lemon Drizzle, and this version is perfect for Autumn! 🍂

Bramble Gin Drizzle Cake Recipe

  • 200g Unsalted Butter
  • 200g Golden Caster Sugar
  • 4 Free Range Eggs (beaten)
  • 200g Self Raising Flour
  • 25ml GIN (we recommend Colonsay Bramble Liqueur).
  • Zest of 2 Lemons
  • About 100g blackberries (keep some aside for the topping)

For the Drizzle

Method

Preheat oven to 180 degrees, grease and line loaf tin.

Cream the butter and sugar together until pale and fluffy. Add the beaten eggs slowly, alternating between a bit of flour each time. Continue to do this until you have added all your eggs and flour.

Add lemon zest and juice.

Stir the first 25ml of bramble gin and bake for around 50 minutes (or until a knife comes out clean).

Mix all the drizzle ingredients together.

After the cake is out the oven and cooled, pour over over the drizzle icing! Add a few blackberries to the top.

Slice and enjoy!
