Gin Berry Pudding Sauce!
Gin Berry Pudding Sauce Recipe
- 400g Mixed berries (fresh or frozen)
- 100g Caster sugar
- Half a lemon – juice only
- 50ml Gin (we recommend Mór Irish Gin
for this recipe)
Method
Add 300g of the berries to a saucepan, along with all of the sugar and fresh lemon juice.
Bring to a simmer over medium heat until sugar has dissolved. This should take about 10 minutes.
Once the berries have broken down, take off the heat and leave to cool for a few minutes.
Blend the sauce until smooth (a hand blender is a little easier for this!)
Add the last of the berries (100g left) and stir into the sauce back on the heat.
Finally stir in 50ml of gin (add more if you like!).
Serve warm or leave to cool and pour over your favourite dessert!
