Gin Chilli Chocolate Mousse!

Colonsay Gin recommend a garnish of green chilli in their G&T… so a gin, chilli chocolate mousse seemed perfect! Only 4 ingredients, very quick and super super tasty.

I couldn’t believe how quick and easy this recipe was. If the green chilli scares you a little, don’t worry! It just gives a wonderful warmth at the end of each mouthful, so isn’t spicy! When I filmed the recipe video, I had only chilled the mousse for a couple of hours. The longer you leave it, the more moussey/bubbly it becomes. Try and leave it overnight if you can.

Gin Chilli Chcolate Mousse Recipe

  • 100g good quality milk chocolate, broken into pieces
  • 1 green chilli, finely chopped
  • 300ml double cream, whipped
  • 50ml Gin (we recommend Colonsay Gin)

Method

  1. Place the broken up chocolate into a bowl over a pan of gently simmering water – until melted.

  2. Slowly stir in the the green chilli. Take off the heat and leave to cool slightly.

  3. Whisk the cream with the gin in a large bowl.

  4. Fold the melted chocolate into the whipped cream, then spoon into glasses (2-4 portions depending on size) Chill overnight if possible!

  5. Enjoy!
