Gin Lemon Posset 🍋

I wanted to create an easy recipe for Valentine’s Day. I looked at my Two Keys Lemon Mixer… and thought a posset would be perfect! 💕

This tangy, sparkling mixer, made with the juice of Spain’s finest lemons (never concentrate), was inspired by the classic Tom Collins cocktail. It works really well instead of lemon juice in this recipe. Of course, if you want to add an extra squeeze of lemon juice too you can.

 

Gin lemon Posset recipe

100ml Two Keys Lemon Mixer
25ml London Dry Gin
1 lemon – finely grated zest, plus a squeeze of juice (optional)
300ml double cream
80g caster sugar
Stawberry to garnish and a shortbread or two for dipping

 

Add the cream, sugar, lemon mixer, zest to a saucepan on a low-medium heat. Let this simmer and whisk until the sugar has dissolved and it’s reduced slightly (a few minutes). Pour in your gin and stir again (you don’t want to burn off the alcohol).

Give the mixture a taste (careful it’s hot) and see if you fancy a squeeze of lemon or extra gin. Don’t add more than 50ml of gin though as it won’t set!

Let the mixture cool slightly and then pour into glasses. Pop in the fridge for at least 4 hours (preferably overnight).

Add some slices of strawberries on top and serve with some shortbread.
