Gin Lovers Brunch 🥞🍸

Forget your eggs in the morning…this is the perfect brunch for a gin lover! A refreshing G&T goes wonderfully with Blueberry Gin pancakes you know! 😉

 

Greenall’s Blueberry Gin is absolutely delicious! As this gin is made with real fruit, when using it in a syrup you don’t need to add any extra blueberries… you will see what I mean!

The gin syrup works best with American style pancakes (as they soak it up better) I used this trusty Jamie Oliver recipe which never goes wrong for me! I added fresh blueberries to my pancakes – you just sprinkle a few on top before flipping.

Of course you can choose any G&T to go with your pancakes.. but I enjoyed Chilgrove Bluewater Gin and Schweppes 1873, garnished with lemon thyme and lemon. The lemon worked wonderfully with all the blueberries!

 

Blueberry Gin Pancake Syrup recipe

150ml water

150g caster sugar

Juice of half a lemon

50ml Greenall’s Blueberry Gin

 

Method 

Add water, sugar and lemon to a saucepan and stir.

Bring to the boil, then simmer gently until thickened (the syrup should become more golden in colour).

Stir in the gin and and take off the heat.

Let the syrup cool and add to your favourite pancake recipe.

Enjoy!
