Gin Pancake Syrup
I absolutely love pancakes and admittedly have them far too often! However it is an absolute must to have as many as possible on Shrove Tuesday. After playing around with some recipe ideas, this is the perfect treat for gin lovers this Pancake Day!
The gin syrup is wonderfully sweet and I felt that American style pancakes would soak it up better. I was right! I actually used Jamie Oliver’s recipe which never goes wrong for me. I think he would be proud of the addition of a gin syrup.
I had tried Whitley Neill’s Quince gin recently and felt this would combine wonderfully with the tartness of lemon. This gin has prominent stone fruits (peaches and apricots) but is dominated by the unmistakable flavour of quince. These pancakes smothered in gin syrup did not last long in my house!
Gin Pancake Syrup Recipe
200ml water
150g caster sugar
Juice of 1 lemon
50ml gin (my recommendation is Whitley Neill’s Quince)
Method
Add water, sugar and lemon to a saucepan and stir.
Bring to the boil, then simmer gently until thickened (the syrup should become more golden in colour).
Stir in the gin and simmer for a couple more minutes.
Let the syrup cool and add to your favourite pancake recipe.
