Gin & Tonic Cake
Yes you heard right, this is a gin lovers dream cake! It certainly packs a punch and is probably the best kind of drizzle cake ever!
I made mine with Pickering’s Gin Navy Strength and Merchants Heart Floral Tonic Water. With the lime botanicals in the gin paired with the floral notes, this makes a wonderful syrup to drizzle over the top. Feel free to use your favourite gin and premium tonic water though!
Gin & Tonic Cake Recipe

200g Unsalted Butter

200g Caster Sugar

4 Free Range Eggs (beaten)

200g Self Raising Flour

30ml GIN (we recommend Pickering’s).

Zest of 2 Limes
For the Drizzle
- 150g Granulated Sugar

Juice of the 2 Limes

30ml Tonic Water (we recommend Merchants Heart)

50ml GIN (Yes, more gin!)
Method

Preheat oven to 180 degrees, grease and line loaf tin.

Cream the butter, lime zest and sugar together until pale and fluffy. Add the beaten eggs slowly, alternating between a bit of flour each time. Continue to do this until you have added all your eggs and flour.

Stir the first 30ml of gin and bake for 45 minutes (or until a knife comes out clean).

Mix all the drizzle ingredients together.

After the cake is out the oven and still warm, poke holes all over and pour over the drizzle!

Leave to cool, slice and enjoy!
