Like the origin of all great Irish ideas, Poacher’s was the result of a conversation shared in a local pub one night! Using Irish ingredients, Poacher’s is Ireland’s first premium, natural mixer brand. Their tonics and Ginger Ale will pair perfectly with your favourite gins!
The Story
The team at Poacher’s were faced with too many sugary mixers filled with ingredients they felt were more at home in a lab than their local watering hole. They wanted to mix their favourite spirits with something more natural!
If the team were going to create Ireland’s first premium, natural mixers, they wanted to use Irish ingredients. Hand cut Irish herbs for their tonic waters from County Meath. Organic Irish apples from County Kilkenny for their ginger ale. All of them are mixed with pure Irish spring water. It is important to Poacher’s that they use the natural ingredients they have on their shores, which also supports the communities that grow them.
From that first night, their idea grew and before long, the perfect home for Poacher’s was found on the beautiful Litterberg Estate in County Wexford, where the bounties of this rich land had been pilfered and poached for centuries.
The tonics
Classic Tonic Water
It all starts with natural Irish spring water which brings an unrivalled smoothness to Poacher’s drinks. Add to that a very light sprinkling of Irish thyme followed by a swift hit of quinine and their quintessential tonic is born. The sugar content is kept very low to allow the spirits it’s mixed with to really shine through.
The lower the sugar content the more you taste your gin!
Citrus Tonic Water
Fresh Irish rosemary and natural Florida orange goes into Poacher’s Citrus Tonic Water. These are combined with a base of natural quinine from the Congo.

Wild Tonic Water
Poacher’s Wild is also made with Irish spring water, natural quinine and sugar. To give it a floral touch, they add wild elderflower from Macreddin Village Wicklow, home to the beautiful Brook Lodge Hotel. This gives it a unique flavour that pairs wonderfully with fruity and citrus forward gins.
Ginger Ale
Probably the most expensive ginger ale ever created. Poacher’s ginger extract is a blend of 3 African gingers, blended with a touch of lime and organic apple syrup from the Highbank Orchard in Kilkenny. Lower in sugar than other premium ginger ales it is best reserved connoisseurs who know their ginger.
