Malfy Gin Lemon Cake

The first  ever gin and tonic cake I baked was a lemon drizzle, so as well as paying tribute to Malfy Con Limone Gin, this cake has all kinds of nostalgia floating around the kitchen as I bake. You can’t beat an old classic, and the flavour combo in this bake is simply divine.

Malfy Gin, distilled just outside of Turin, uses a selection of coastal grown Italian Lemons – some from Amalfi and some from Sicily, which gives the gin a fresh and zesty Aroma. With this in mind, it’s a perfect match for this oozy, boozy, lemon cake.

Igredients to make Malfy Gin Lemon Cake:

  • 50ml Malfy Con Limone Gin
  • 225 grams soft butter (plus extra for greasing)
  • 300 grams caster sugar
  • 6 large eggs
  • 350 grams plain flour
  • ½ teaspoon bicarbonate of soda
  • 250 grams plain fat-free yoghurt
  • 1 teaspoons vanilla bean paste
  • 2 lemons
  • 100-120g icing sugar

To make Malfy Gin Lemon Cake:

Preheat the oven to 180°C. Butter your bundt tin very, very thoroughly to ensure the cake does not stick.

Cream together the butter and sugar in a mixing bowl until light and fluffy. Add the eggs one at a time, whisking each one in with a tablespoon of flour. Fold in the rest of the flour, the bicarbonate of soda, the yogurt, zest of two lemons and the juice of one lemon, and vanilla bean paste.

Spoon the mixture into your greased tin, spreading evenly. Cook for approximately 45–50 minutes or until well risen and golden. After 45 minutes, insert a skewer into the centre of the cake – if it comes out clean, the cake is ready. Poke a few holes in the cake and brush with a little gin. Cool slightly, tip onto a wire rack and brush with more gin (I used about 20ml of the entire brushing part). Leave to cool.

Once cool, make the icing by combining the icing sugar, 2tbsp lemon juice and remaining gin, until you have a thick icing that will drip down the sides of your cake. Drip the icing down the edges of the cake. Serve with cream of a Malfy g&t – cheers!
