Jawbox is distilled slowly, very slowly, in a traditional copper pot still. Letting the botanicals sit in the spirit for some time is a crucial part of the process to ensure a vibrant flavour. The gin is made with eleven botanicals including local Belfast Black Mountain heather. Most of these botanicals are treated with the “steep and boil” method, and three use the vapour extraction method to preserve their delicate aroma. The Jawbox range includes the Original Gin, Pineapple & Ginger and Rhubarb & Ginger Gin Liqueurs.
Taste: A classic dry gin. On the nose you’ll smell big, bold juniper and pine notes balanced with coriander and clean citrus. The taste gets more complex on the palate. It starts with citrus and juniper developing into pepper, green angelica and subtle rootiness. The finish is citrusy with lingering juniper and pine with the quiet complexity of the supporting cast.
Recommended serve: Serve with plenty of ice, a premium ginger ale, and a wedge of lime.
