The BEST Gin Ice Cream Recipe!

Tarquin’s Gin, Grapefruit & Thyme Ice Cream ! An oldie but a goodie! I posted this recipe a couple of years ago (before I was the Gintern) and now thought I would re-share it! It’s never too cold for ice-cream… especially if you’re eating it cosied up by a nice warm fire!

 

This happens to be the best gin ice cream you will ever taste. You don’t require an ice cream maker and its ready to eat in about 4 hours. The best ingredient is the wonderful Tarquin’s Cornish Dry Gin.

 

Tarquin’s Gin, Grapefruit & Thyme Ice Cream Recipe

  • 100ml cup water
  • 100ml granulated sugar
  • Peel of half a grapefruit
  • 1 tsp fresh thyme (plus extra for sprinkling)
  • 200ml double cream
  • 6 tablespoons icing sugar
  • 100ml freshly squeezed grapefruit juice or 50ml added with 50ml Tarquin’s gin 

If you don’t catch my slurred words on my video below, here is the method:

Make the syrup by boiling the water and sugar together. Add the thyme and grapefruit peel.

Leave in the syrup for about 15 mins, strain and then pop into the fridge to fully cool.

Whisk the double cream in a large bowl until it thickens.

Slowly whisk in icing sugar.

Add your grapefruit and gin (or just grapefruit if for some reason you didn’t want the gin!)

Finally add about 70ml sugar syrup and stir until smooth.

Pour the mixture into a container with a tight lid and freeze overnight or for about 4 hours

To serve sprinkle over a little more thyme and enjoy!
