You need to try Rhubarb Gin Custard!
Rhubarb and custard go together just like gin and tonic! Slingsby Rhubarb Gin tastes wonderful in custard, perfect to pour over your favourite dessert!
It’s that time of year when I love to make a good crumble! We all have our favourite recipe, and mine includes chopped root ginger and oats in the topping. Adding Slingsby Rhubarb Gin to a homemade custard is a revelation! I loved it with my apple, raspberry and ginger crumble! Of course you can pour it over anything you like! Also, making your own custard isn’t as hard as it sounds and is well worth it!
Rhubarb Gin Custard recipe
- 6 Large Free Range Eggs
- 4 tbsp Caster Sugar
- 2 tsp Cornflour (you can add more if you
like it thicker)
- 500ml Whole Milk
- 500ml Double Cream
- 25-50ml Rhubarb Gin (We recommend Slingsby)
This recipe will make enough for 6-8 people.
Whisk the eggs and sugar together in a bowl until light and smooth. Whisk in the cornflour (if you like it a bit thicker add an extra teaspoon).
On a gently heat, pour the milk and cream to a saucepan. Once steaming (but not boiling) add a little bit to the egg mixture. Whisk this in – it will loosen the mixture.
Pour the rest of the egg mix into the saucepan on a low heat. Stir occasionally for about 5-8 minutes until thickened and silky smooth.
Stir in the Rhubarb Gin! Start with around 25ml and add more to your taste. I like to add a little bit at the end when it’s off the heat and just about to pour!
Pour over your chosen dessert and enjoy!
