Spiced Apple Gin Cupcakes 🍏🍂
I wanted to create a recipe that would be perfect for Autumn! 🍂Elemental Apple Gin is a delicious in this recipe. Give it a go!
These cupcakes are pretty versatile, you could change the fruit inside if you like, but the spiced apple is so delicious.
Spiced Apple Cupcake Recipe
3 medium free range eggs (whisked)
150g caster sugar
150g unsalted butter
150g self raising flour
1/4tsp baking powder
200g of chopped apple
1tsp ground mixed spiced
1tsp ground cinnamon
2 tbsp tonic water (we recommend Hartridges)
For the icing
150g unsalted butter
300g icing sugar
25-50ml GIN (we recommend Elemental Apple in this recipe)
Method
Preheat your oven to 170°c (fan) and prepare a cupcake tin with 12 cupcake cases.
Stew the chopped apple in a saucepan with the mixed spice and a little water. It’s ready when it has broken down but there are still some small chunks of apple!
Cream butter and sugar together in a bowl and then add the eggs, flour and baking powder (I like to alternate the eggs and flour) Mix until pale and creamy.
Finally stir in 2 tbsp tonic water and 1 tsp of cinnamon.
Add 1 tbsp of cake mix into the cake cases, then top with 1 tbsp of apple, then add a spoon of cake mix on the top of each one.
Bake in the oven for about 20 minutes or a skewer comes out clean.
Make the buttercream. Whisk the butter until soft and then slowly add the icing sugar until its creamy and smooth.
Time to add your GIN! Do it a bit at a time and taste as you go! (if you like a lot of gin you may need a little more icing to thicken it up).
Once your cakes are cooked, cool completely before piping on the buttercream frosting!
Decorate how you like. I added a little slice of apple in each one.
