St Clement’s G&T Cake!
A delicious twist on a Lemon Drizzle! Perfect with a London Dry Gin like Trevethan or Holly’s. Navas Tonic water pairs wonderfully with the gin in the drizzle topping too!
St Clement’s G&T Cake Recipe

200g Unsalted Butter

200g Caster Sugar

4 Free Range Eggs

200g Self Raising Flour
-
Zest of 1 Lemon and 1 Orange
For the Drizzle
- 150g Granulated Sugar

Juice of the 1 Lemon and half an orange.

Good plash of Tonic Water (we recommend Navas)

25-50ml GIN (Yes, more gin!)
Method

Preheat oven to 180 degrees, grease and line loaf tin.

Cream the butter, lemon and lime zests and sugar together until pale and fluffy. Add the eggs one by one, alternating between a bit of flour each time. Continue to do this until you have added all your eggs and flour.

Stir the first 25ml of gin and bake for 45 minutes (or until a knife comes out clean).

Mix all the drizzle ingredients together.

After the cake is out the oven and still warm, poke holes all over and pour over the drizzle!

Leave to cool, slice and enjoy!
